Chocolate Sunflower Butter Snack Bars

Chocolate Sun Butter Snack Bars


It's been hard finding a good snack or energy bar at the store with ingredients that I liked, so I put together a no-bake recipe for snack bars that can be easily made at home. Feel free to modify this recipe to include your favorite ingredients. We decided to use sunflower butter because my daughter is allergic to nuts. The coconut oil adds a richness and depth that I haven't tasted in other bars. Keep this stored in the freezer or it may melt.


Sunflower Seed Butter Layer

  • 3/4 cup sunflower seed butter (or nut butter of your choice)

  • ¼ cup coconut oil

  • 2 tablespoons honey or maple syrup

  • ½ cup coconut flour

  • ½ teaspoon vanilla extract

Chocolate Layer

  • ¼ cup chopped dark chocolate or semi-sweet chocolate chips

  • 1/2 cup coconut oil

  • ½ cup unsalted, sunflower seed butter

Additional toppings in between the layers (Optional):

  • Pumpkin seeds

  • Sunflower seeds

  • Almond slices or other nuts

  • Unsweetened dried Coconut flakes

  • Raisins or other dried fruit

  • Chia seeds or flaxseeds

Additional add-ins to the Sunbutter layers (Optional):

  • Collagen protein powder

  • Pumpkin Spice Powder

INSTRUCTIONS

  1. Line an 8-inch square baking pan with parchment paper. Make sure you have space in the freezer for this pan. 

  2. For the Sunflower Seed Butter Layer: In a medium bowl, add all the Sunflower Seed Butter Layer ingredients. Using a spatula, stir and fold until thoroughly mixed and smooth.

  3. Transfer the sun butter mixture into the pan, and smooth into an even layer.

  4. Sprinkle on additional toppings at this time, for an extra crunch!

  5. Next, make the Chocolate Layer. Use the double boiler method to melt the chocolate until it is smooth and then add the coconut oil and sun butter until melted. Another option is to microwave the ingredients in 20 second increments in a microwave safe bowl.

  6. Pour the chocolate mixture over the sun butter Layer. Smooth chocolate into an even layer using a spatula.

  7. Transfer pan to freezer and let it harden for about an hour. Once hardened, remove from freezer and slice into bars.


Enjoy! Store in a container in the freezer. Before eating, let it thaw for 5 minutes.
